ingredients
- 29.58 ml white wine vinegar
- 14.79 ml fresh cilantro
- 1.23-2.46 ml sugar
- 3.69 ml kosher salt, divided
- 29.58 ml olive oil, plus
- 9.85 ml olive oil, divided
- 453.59 g medium shrimp, shelled and deveined
- 1-2 clove garlic, minced,according to taste
- 1.23 ml crushed red pepper flakes
- 226.79 226.79 g mesclun or 226.79 g mixture greens
- 113.39 g feta cheese, crumbled
directions
- In a medium bowl combine vinegar, cilantro, 1/2 tsp.
- salt, and sugar.
- Slowly whisk in the 2 Tblsp.
- of oil.
- Set this aside.
- Heat the remainder 2 tsp.
- oil in medium skillet over medium heat add the next 3 ingredients and remaining 1/3 tsp salt.
- Cook 2-4 min.
- or until opaque.
- Combine with dressing and the greens.
- Toss well to coat then top your salad with the Feta Cheese and Serve--.
