Avgolemono Sauce

Adopted! Goes with the already posted "Avgolemono Soup (Chicken Soup)" recipe. As Cookgirl says, an onion? I don't know what the intent of the original poster was, but I don't use any onion. Thanks, CG, for bringing it to my attention!

Ingredients:

Servings: 6

• 1 -2 cup soup or 1 -2 cup broth
• 2 eggs
• 1 whole onion
• 1 lemon, juice of
• flour

Directions:

1. Mix a little flour with the lemon juice then add the eggs and beat well.
2. Slowly add the broth while continuing to beat.
3. Pour and mix the avgolemono sauce into your food.
4. Remove from heat before the sauce thickens.

First, I warmed the broth, whisked in about 1 tablespoon of flour then added a bit of warmed broth to the eggs. Quickly whisked the eggs so they wouldn't curdle then added to the pot, whisking constantly for about 5-6 minutes until sauce was slightly thickened as a topping for Dolmades with Yogurt-Mint Sauce. I have no idea what I was supposed to do with one whole onion...???
