Very yummy chicken! I love to grill, and this is a great recipe....I couldn't find chicken leg quarters in anything less than a 10 lb bag, so I bought thighs and drumsticks. Cut the cooking time down a bit, but left the marinating time alone. I ended up with about 5 hours marinating time. The chicken turned out wonderfully moist and smokey from the grill. Made for Best of 2010 Tag!

I combined this with Roasted Halved Chicken With Garlic-Herb Paste 420966. Marinating my chicken quarters with the lemon/thyme/garlic marinade (no oil) for an hour, then smearing on the garlic paste from the other recipe and marinating another hour. I think the lemon juice marinade made huge difference as the lemon flavor really permeated the chicken meat and skin, and the chicken was very moist. I seared the chicken - too much on the leg quarters the skin charred fast. Then offset grilled for the rest of the time. It took 80 minutes for my 4 1/2 lb chicken to cook through. Wow. Could a 5 star-tasting recipe really be this easy? Yes! I was amazed by the flavor. The marinade is simple to throw together (I accidentally put my lemon zest in with the marinade, btw, and it turned out great). I let the chicken marinate all day, then put the chicken on the grill near dinnertime. It was that easy. The lemon flavor is perfect - not too much. My whole family loved this.
