      For those with a wheat allergy, this is a solution, but only a partial. The taste, if cooked as directed, is hollow. It has none of the flair of spano and other greek dishes. Adding nutmeg, some lemon may help, that is if you want something other than a thin taste.Experiment, then post your results fo rthe rest of us.

      I liked the sound of this dish - I love brown rice, feta, spinach and olives, but for me it was too bland and a bit 'eggy' tasting. As suggested in other reviews, it needs garlic and maybe some herbs/spices and if I were to make it again I would put more feta and olives too.

      This was a delicious and easy to prepare recipe. I substituted fresh spinach for frozen and low fat feta for regular feta cheese. Very tasty and filling without being heavy. I can't wait to make it again.

      it was ok... i made it too salty by adding the broth. the cheese is salty enough.

      We really liked it after a few changes, I used broth and I added some minced garlic to the onion and before the rice I added a sip of white wine to deglaze and added some spices (oregano, basil and rosemary)... I also put some fresh ground pepper and parmesan on top before baking. Thanks for sharing - I will prepare this again...

      We didn't like this. I used broth and added some garlic, but still not very flavorful. The texture, too, left a lot to be desired. And what flavor there was was sort of strange... it tasted like cabbage smells. Not a winner in this house.

      This is a great, healthy dish. As written, I think it would be quite bland. I added garlic, dried basil and dried oregano while I sauteed the onion in a rosemary-infused olive oil. I added some lemon juice to the vegetable stock when I cooked the rice. I wanted a creamier consistency, so I pureed the spinach before I added it to the mixture. Finally, I topped the entire thing with grated parmesan to create a cheesy crust before baking. With a few variations you can get a really flavourful dish.

      Try this for breakfast too! Very good recipe. I followed exactly except added fresh mushrooms and using water over broth and thought it was very tasty. I will make it again; but will use more feta cheese next time as i love feta and would like to have tasted a bit more of it in the dish. It was easy to make and healthy too. I made enough for the week; and will be eating it for my breakfast as i think it would make a good breakfast food that is filling and healthy.

      Needed a recipe to use up some leftover brown rice and this was okay but bland. I may not have had the right amount of feta and would definitely add extra spices.

      Very good! I used broth, added 4 fresh chopped garlic cloves and omitted olives. I didn't have enough feta, so I had to use some mozzarella. We loved this!

      This is SUCH a great recipe. It has all my favorite ingredients and though time consuming to make, it is well worth the effort. The flavors blend together nicely, no ingredient overpowers the next. The only change I would make is to add some fresh minced garlic and some freshly cracked pepper. What a great way to jazz up boring brown rice! I know we will make this again and again. Thanks!

      This is absolutely delicious and a big hit at dinner tonight. I went ahead and used plain water and 2 eggs with 2 extra egg whites. It was still rich tasting and full of great flavors. Great recipe, Roosie.

      Wish I didn't wait so long to try this recipie - it's delicious. I used chicken stock instead of water & served it with some baked garlic lemon shrimp. What a meal. It's also great the next day, warm or cold.

      Roosie,This is WONDERFUL!! I love feta so I had to try this and it didn't dissappoint. I cooked my rice in no-fat chicken broth for a little extra flavor and added some minced garlic. All I can say is keep these good recipes coming. An excellent side dish or add a little chicken or tofu for a great main dish.

      This is a nice healthy dish. DH loved it (he is a rice lover). I used 5 cups of packed fresh spinach wilted in boiling water instead of the frozen. The only thing I would change is next time is to add salt and maybe some garlic. Thanks Roosie for sharing this recipe.
