  • 2 large English cucumbers (peeled, diced 1/2 inch)
  • 1 package chavrie fresh goat cheese
  • 12 teaspoon garlic, chopped fine
  • 1 tablespoon mint, chopped
  • 1 tablespoon dill, chopped
  • 1 ounce lemon juice
  • salt and pepper

directions

  • Drain cucumbers for 10 minutes in a colander.
  • Meanwhile combine all remaining ingredients.
  • Fold in the drained cucumbers.
  • Refrigerate overnight before serving.
