Cumin Lamb, Sweet Pepper & Onion Kebabs

ingredients
- 340.19 g boneless lamb
- 118.29 ml lemon juice
- 59.16 ml olive oil
- 59.16 ml fresh ginger, finely minced
- 4 garlic cloves, finely minced
- 19.71 ml cumin
- 19.71 ml liquid honey
- 1 large yellow sweet pepper
- 1 small red onion
- salt and pepper, to taste
directions
- Soak skewers (for 1 hour or more).
- Cut lamb into bite size pieces. In a large bowl whisk 1/4 cup lemon juice, 2 tablespoons oil, 2 tablespoons ginger, 2 cloves minced garlic, 2 teaspoons cumin, 2 teaspoons honey. Add lamb, stir to coat, cover and chill 4 hours or overnight; stir once.
- Oil grill and preheat BBQ to med-high. Slice pepper and onion into chunks and thread onto skewers with lamb (alternating ingredients). Sprinkle with salt & pepper.
- In a small bowl, whisk leftover marinade ingredients and set aside for basting. Grill kebabs 7-10 minutes, turning occasionally.
- Serve with pita, greek salad and tzatziki -- Yummmm!

Why "SoupCookie"?
My cousin Ryan use to come to my house after school sometimes and was *always* hungry! So he used to make his version of chocolate chip cookies and I can't remember what he did or didn't do right but the cookies never failed to come out flat and doughy and gooey. We'd put them in a bowl with milk and eat it with a spoon.....sooooo good!
To this very day his recipe has not been deciphered ;)
