I got the idea of this soup from a gorgeous stew in Saveur, but I wanted something smoother and quicker so I adapted it to use hulled fava beans a pressure cooker.
- 1 cup dried fava beans (hulled)
- 1 tablespoon olive oil
- 6 garlic cloves
- 5 sprigs fresh thyme
- 2 bay leaves
- 1 large yellow onion (minced)
- 4 cups water
- 1 teaspoon salt (or more to taste)
- 1⁄2 lemon, juice of
- saute onions.
- add everything (except lemon) to a pressure cooker.
- cook 30 minutes.
- adjust water to taste.
- add 1/2 lemon (juiced).

NEXT TIME USE "VEGETABLE STOCK" AS IT ADD A WONDERFUL FLAVOR
