      Place feta in a bowl and mash well.

      Add the rest of the ingredients and mix together thoroughly or alternatively place all ingredients in a food processor and whirr on slow speed until smooth.

      Serve with crackers or slices of fresh country bread.

      Everybody loved this. I did add a dash of lemon juice and used some fresh oregano; I mixed it in the food processor. I made homemade pita chips and served the dip with them as well as carrots, zucchini, and celery.

      I made this last night to take to a friend's house as an appetizer and we all loved it. The garlic was really pronounced as I used a couple of huge cloves. I like things garlicky, so this worked for me, but next time I will try not to use ones quite so big. I made exactly as posted, including the Tabasco. We served over toasted garlic bread slices (DH said we kept the vampires away last night!). The dip was wonderful and I will defintely make this again. The four of us devoured the whole thing, so I would definitely double the recipe if you are hoping to serve more than 4. Thanks, Evelyn!

      I really enjoyed this dip. You may need to add more olive oil depending on your feta. Great afternoon snack and my toddler also enjoyed it.
