Feta Cheese Bread

  • Put the warm water in a medium bowl, sprinkle the yeast over the water and stir. When it starts to bubble, add the flour and start to stir with a wooden spoon (or by hand). Add the olive oil slowly until the dough is pliable and smooth. Work in the feta cheese, kneading until evenly distributed throughout the dough. Cover the dough and let it rest for 30 minutes.
  • Place the dough on a lightly oiled cookie sheet and flatten with the palms of the hand. The dough shouldn't be any higher than about 1 1/4 inches. Score the top lightly in squares or diamond shapes. Cover with a towel and allow the dough to rise for one hour.
  • Preheat the oven to 340F (170C).
  • Bake for approximately 30-40 minutes. It should be done on the bottom and nicely browned on top.

  1. The bread tasted good and had a nice, soft texture, but it was a little flat-looking -- but maybe that's the way it's supposed to look. It needs a little bit of salt. I let mine proof longer on the 2nd rise than the directions say to do (probably another 1/2 hour to 45 minutes) because it hadn't risen enough after an hour. My son says that he thinks the bread tastes like a delicious bread stick and that it would be awesome dipped in some marinara sauce. The brand of Feta cheese that I use (I think it's called Frigo?) had some rather large chunks in it and I thought about breaking them up before I added it to the bread, but I got lazy and didn't want to bother. I'm glad that I didn't, because it was fun seeing the Feta chunks in the bread. My bread wasn't as brown on the top as I hoped it would be, but I went ahead and pulled it out of the oven anyway since the temperature of the bread was already up to 200°F. Will definitely be making this again -- I'll just be sure to add a little salt the next time.
     
  2. This is a great recipe! Simple and quick. <br/>Just something I added though:<br/>I used tomato and basil feta cheese and then sprinkled the top with sliced almonds and melted butter. <br/>Uber good, too :)
     
  3. This was very easy to make. I made it as written. It cooked up nice after 30 minutes. It has a wonderful cheesy taste. Thanks for sharing. Made for ZWT 6.
