Feta, Olive and Tomato Dip

"Use a feta that is not too salty, there can be quite a difference in flavor when you buy feta cheese. You can substitute the fresh tomatoes for sun-dried if you like a more pungent flavor, but use less and taste it before you add more. Add several tablespoons of milk to turn the dip into a dressing. Also very good to spread on a sandwich and top it with tomato and cucumber slices."

  • Put the first eight ingredients in the food processor and mix, transfer to a bowl and add the olive oil, tomatoes, onion and olives.
  • Add the lemon juice, put in the fridge for at least one hour, serve with melba toast, crackers or pita bread strips.

  1. Great recipe - I used it as a dip and it went over very well - served with corn tortilla chips.. I whipped the cottage cheese, feta and the herbs. Used a local Feta cheese "Gorts" excellent cheese. As suggested I added 1 sundried tomatoe, did not decrease fresh tomatoes (I used Roma tomatoes) and whipped the sundried separately and mixed in with the tomatoe etc. Thanks Petsrus for a great recipe
     
  2. This is great dip! It was very easy to prepare and is very flavorful. I am not sure this is for all tastes, but I personally loved it! I plan to serve this next time inside a loaf of hollowed out bread with pita chips and garnished with flat leaf parsley leaves & perhaps even some cilantro. I used good quality feta marked "mild" and used fresh tomatoes, ordinary canned black olives. I took a small lemon half and lightly squeezed it over the finished dip. Where I currently live,I was unable to get cottage cheese, so I used German Quark (which is also a curd cheese)and thought it tasted great in this dip.
     
  3. this was so tasty! i love all the ingredients so combined it was just wonderful, i dipped cucumbers into it and sesame pitas. i used fresh feta in brine, and halved the recipe for 2. i used kalamata olives and fresh tomatoes
     
  4. Well, let me start by saying I didn't follow the directions. I bought a very salty feta, which was vacuum packed in brine. It made a recipe that was way too salty. So I added more tomatoes, more cottage cheese and more lemon juice to help with the saltiness. While the final product was probably different than the recipe is supposed to be, it was a really nice and flavorful dip. We used celery sticks and crackers to dip with. I'll make it again, but next time, I'll pay attention to the saltiness of the feta.
     
  5. How lucky for me to find this recipe. All my favorite ingredients!!! I used sundried tomatoes , canned black olives, parsley and sweet paprika and it was wonderful. Next time, I'll try it with green olives just for a little variation. I served this with Melba Toasts. Thanks again PetsRus for yet ANOTHER wonderful recipe.

Hello, my name is Bonnie and I am a very beautiful cat as you can see if you look at the picture at the top of this page.... What??.. I am supposed to talk about you??? But it says here: About Me!! Well all right then ...... My mom is Dutch and has moved to England in October 2007, after living 15 years in the Netherlands with my English dad. They don’t have any human children and “created” their own family, which means I have to share them with Hannah, she is a 6 years old tortie cat, Abby the dog, she is a 9 year old Beagle, and a one year old black Miniature Pincher named Poppy, I refuse to tell you my age but I am a georgious lilac British Shorthair cat!! It is obvious she adores pets just by looking at her name she uses on Zaar (many on Zaar call her Pets or Petsie Poo), her name in real life is Annelies and that is a common Dutch name. My mom always liked to cook, but since she joined Zaar it got out of control, and it doesn’t help that she is disorganized. Printed recipes everywhere in the house, the recipe binders have got bigger and just between you and me, her hips too!!! I have lived in Holland all of my life until now, but they lived in several different countries/places:- desert and coastal Oman, up North and West in Holland, Vancouver-Canada, Aberdeen- Scotland and in Norway they lived in Bergen and Oslo. We have all moved together to England, as you can see I’ve already learnt the language! I heard her say to Dad that this is the last time she moved to another country...she's had it with moving from one place to another! ( its her age...she's getting grumpy) Mom is 55 years old but I always hear her say that the date of her birthday does not mean that much to her, the date of her cancer anniversary is more important, because so far she is a survivor. Besides cooking she has other interests too, crafts, gardening and soap making. She likes Zaar and is one of the hosts on the German-Benelux Forum here on RecipeZaar.
