Fiesta Feta Shrimp

- 1 1⁄2 tablespoons olive oil
- 1⁄4 cup chicken broth
- 1 lb large shrimp, peeled and deveined
- 1 (20 ounce) can diced tomatoes (drained)
- 4 cloves minced garlic
- 1⁄2 teaspoon of spicy seasoning salt, plus a little extra to taste (I use Spicy Montreal Steak Seasoning)
- 4 ounces crumbled feta cheese
- 2 green onion tops, diced (optional)
directions
- In a large saute pan heat olive oil over medium heat and saute garlic for 1-2 minutes.
- Add shrimp and just enough chicken broth@ 1/4 cup to cover bottom of pan and sprinkle@ 1/2 tsp.
- of seasoning salt over shrimp.
- Saute for@ 3-4 minutes until shrimp turns pink.
- Add tomatoes and stir until heated.
- Set oven to broil and transfer shrimp mixture to a metal cookie pan that has been sprayed with no fat cooking spray.
- Lightly season shrimp mixture with additional seasoning salt, then cover shrimp with feta cheese and broil@ 4 minutes until feta cheese is softened or bubbly.
- May Sprinkle with green onion tops if desired.
- Serve immediately.

I?m ?originally from Texas, but now live in Florida. Still gotta have that spice though....love chipotle peppers, habaneros, and jalapenos. This is a picture of myself & my 2 daughters taken in Dec'06. I am working on my graduate degree, & still work as a nurse prn. When I'm not cooking and eating what I cook... I head for the gym to work out. As far as cookbooks, I love the church/ community cookbooks, where someone has dug out old handwritten recipes by granny and shared them with others-those are the best kind. If I had a month off, I'd for sure go hiking, would love to visit Australia and New Zealand.?
