Greek Chicken Tortilla Roll-Ups

  • Place chicken in a plastic bag set in a deep bowl. For marinade combine oil, lemon juice, mustard, the 2 cloves garlic, oregano, and pepper. Pour marinade over chicken in bag. Seal bag; turn to coat chicken. Refrigerate for 3 to 24 hours, turning bag occasionally.
  • For sauce, combine the yogurt, cucumber, the 1 clove garlic, and dillweed in a small bowl. Cover and chill until serving time.
  • Heat a large nonstick skillet over medium-high heat. Add half of the chicken and marinade. Cook and stir for 2 to 3 minutes or until chicken is no longer pink; drain. Repeat with remaining chicken and marinade.
  • Meanwhile, wrap tortillas in foil. Heat in a 350 degree F oven for 10 minutes. To serve, place a scant 1/3 cup of the chicken and a generous tablespoon of sauce on each flour tortilla. Top with shredded lettuce and roll up.
  • (Marinade time not included in cook time.).

  1. I really liked the combination of the distinctively different flavors in these wraps. I doubled the sauce because i thought there would not be enough of i. Won't do that again! I also might cut down on the garlic in the sauce next time.

  4. Lovely light dinner, DH and I loved this! I am not a cucumber fan, so I made my yoghurt sauce with a garlic clove and lemon juice but bar for that followed the recipe exactly - delicious! Thanks for posting!
     
  5. I had left over chicken which made it easy. I pan heated the tortillas. Nice lunch!

I just had my 2nd little boy this past Jan of 08. isn't he cute? i had my other little one Jan of 06. he's rotten and a cutie also!! So now i have 2 Jan boys! My hubby's in the Army so we move every few years. Right now we are in our home state of TX! and happy to be back, close to family that can babysit for us! hubby is gone for a whole yr right now, so the baby will grow up without him right now.
