Quick, easy, yummy, comfort food (i.e. not healthy!)

- 500 g grated tomatoes
- 1 tablespoon olive oil
- 2 tablespoons butter
- 4 eggs
- cooked chips (french fries)
- Heat butter and oil in pan cook tomatoes over medium heat until most of the liquid has been absorbed.
- lower heat break whole eggs into sauce, cover pan with lid
- when eggs are done pour tomato egg mixture over hot chips, add salt and pepper to taste.
Real comfort food! DD (toddler) and I enjoyed this for a quick to the table breakfast. Don't use a cast iron frying pan though as it made the egg whites change colour from the acid of the tomato. I admit I didn't use olive oil (ran out and it's holiday for the stores!) I used all butter & shoestring fries to be quick. I also sliced and chopped the tomato as I don't know how to grate a tomato.. I will make this again.
