Greek Festival Lemon Rice Pilaf

"Every September Salt Lake has an amazing Greek Festival. Back in 2001 I got a pamphlet of Greek recipes from the festival. This rice pilaf is very similar to the rice pilaf served at my favorite Greek restaurant. Opa!"

  • Heat butter in a heavy skillet. When it's hot, add the rice and, stirring constantly, saute on medium heat until transparent but not brown.
  • Add the lemon juice, chicken broth, and salt.
  • Cover and simmer for 20 minutes.
  • Remove the pan from the heat and let pilaf stand uncovered for 5 minutes before serving.

Love this Recipe...I did a few modifications....I sauteed a chopped onion and a few garlic cloves in the butter with the rice, then added 2 tsps of homemade greek seasoning along with the stock and lemon juice...At the very end I added lots of chopped flat leaf parsley and oregano, and the juice and zest of another lemon, and checked for salt and pepper....Tonight I'm going to toss in some peas at the end...my family can't get enough of this!!
     
  2. We love lemony rice around here and this recipe fit the bill. The directions for cooking were perfect. The only change I made was to add more lemon juice and zest from one lemon right before serving. I used Veggie Better Than Bullion and like another reviewer mentioned, it looked a little dirty because the broth is so dark. No matter, it was still delicious!
     
  3. I have made this recipe several times. The only suggestion I have is one I received from a Salt Lake City greek who suggests to brown the rice before adding any other ingredients. That toasted flavor makes a difference!

  5. I just made this for dinner with a whole roast chicken and steamed broccoli with cheese sauce. The rice is so delicious! I followed the recipe pretty closely, except I used 4 1/2 cups of broth instead of 5 and I added onions with the rice. It was so good! I'll be using this recipe regularly. Thank you!
