- 236.59 ml unpeeled cubed cucumber
- 118.29 ml reduced-fat sour cream
- 9.85 ml red wine vinegar
- 78.78 ml crumbled feta cheese
- 1.23 ml fresh ground black pepper
- 0.61 ml dried mint flakes
- 453.59 g lean boneless leg of lamb, cub into 1/4 inch slices
- 1 onion, cut into quarters and thinly sliced
- 4.92 ml all purpose Greek seasoning
- 4 (32 inch) flour tortillas
- 1 large tomatoes, thinly sliced
- 236.59 ml packed baby spinach leaves
directions
- Combine first 6 ingredients in a small bowl. Stir well. Cover and chill.
- Coat a large nonstick skillet with cooking spray or a little olive oil. Add lamb and onion. Cook over medium-high heat, stirring occasionally, 6-7 minutes or until lamb is done. Remove from heat. Stir in Greek seasoning.
- Divide lamb mixture evenly among 4 tortilla. Topp with cucumber sauce, tomato, and spinach. Roll up tortillas.
