  • 1 medium red onion, about 10 oz., sliced
  • 1 teaspoon olive oil
  • 1 (16 ounce) package prebaked 12-inch pizza crust, such as Boboli
  • 1 cup pizza sauce, prepared
  • 8 ounces shredded mozzarella cheese, 2 cups, divided
  • 3 ounces crumbled feta cheese, about 3/4 cup, divided
  • 1 (12 ounce) jar roasted peppers, drained well and sliced
  • 2 cups loosely packed baby spinach leaves, about 2 oz
  • 13 cup pitted black olives, preferably Kalamata
  • 1 teaspoon dried oregano
  • 12 teaspoon dried thyme

directions

  • Position broiler rack 4" from heat source.
  • Position another rack in middle of oven.
  • Preheat broiler.
  • On pizza pan or large baking sheet toss onion with oil.
  • Broil, stirring occasionally, until golden, about 10 minutes.
  • Transfer onion to large bowl; cover to keep warm.
  • Heat oven to 450°F
  • Place pizza crust on same pan.
  • Spread crust with sauce leaving 1-inch border around edge; sprinkle with 1 cup mozzarella and half of feta.
  • Stir peppers, spinach and olives into onion in bowl; spread over cheese on crust.
  • Sprinkle with oregano, thyme and remaining cheeses.
  • Bake in center of oven until crust is crisp and.
  • cheese melts, about 12 minutes.

  2. This has terrific flavor! I made my own crust, and decided to split the toppings over two small crusts (about 10" each). There was more than enough topping; I think on one crust it might have been too much! I don't care for roasted red peppers, so I threw a sliced green pepper under the broiler with the onions and it came out great. I love the flavor the oregano and thyme gave! I will definitely make this again. Thanks for posting! Made for Mischief Makers, ZWT 6.
