ingredients
- 59.14 ml kalamata olive, chopped
- 59.14 ml feta cheese, crumbled
- 1 small cucumber, diced
- 1 small red pepper, diced
- 2 leaf romaine lettuce, chopped
- 1 tomatoes, diced
- 29.58 ml sun-dried tomato pesto
- 2 rosemary flavord flour tortillas (or any flavor)
directions
- Mix first 6 ingredients together.
- Spread 1 T pesto on 1 tortilla, repeat with 2nd tortilla.
- Divide greek salad among tortillas and roll-up.
- Slice in half and enjoy.

Yum! DH and I really enjoyed this palate-pleaser rollup w/soup for a satisfying and tasty light dinner meal. I could not manage a whole cucumber and red pepper (even sml) in the mixture for just 2 tortilla servings. I combined the pesto w/2 tbsp cream cheese to make it more uniformly spreadable and attach itself to the veggie mix so the rollup was easy. The ingredient mix is flavor perfection, but also invites a creative cook (such as myself) to innovate a bit and a measure of diced avocado is what came immediately to mind. The bonuses here are the easy, quick fix and how many great uses also came to mind. I expect to try all of them, so thx for posting this winner for us.
