  • Bake the pie crusts until golden brown in a pre-heated 350 degree oven.
  • Heat 4 tablespoons butter in skillet; sauté onion and garlic.
  • Stir in the cooked, squeezed drained spinach.
  • In another saucepan, melt 6 tablespoons butter, stir in flour.
  • Gradually stir in milk until it thickens, then add salt, pepper, vanilla, nutmeg and spinach mixture.
  • Beat eggs; stir eggs and cheese into mixture.
  • Evenly divide entire mixture between baked pie crusts.
  • Cover edges of pie crusts with foil and bake at 350 for 35-40 minutes (or until firm and puffed.).
  • This tastes like a quiche and can be served either as a side dish or as the main course.

I'm a single mom of 2 boys (ages 15 & 23). I'm also an RN working in homecare. My favorite recipes are 1 pot dishes that are quick, although I don't mind spending extra time on weekends for those outstanding dishes. My biggest problem is that I'm one of those people who has a hard time cooking small. Even though there's only 2 of us (my oldest is away in the Navy), I still cook as though I'm cooking for 6. My family and friends love this and come by with their own casserole dish to load up and take home. I just started writing down my recipes... from much coersion from family & friends. I've always been a dump cook... adding and deleting items, depending on what's on hand.
