Dressing
- 2⁄3 ounce crumbled feta cheese
- 2 tablespoons red wine vinegar
- 1 1⁄3 tablespoons olive oil
- 1⁄3 teaspoon minced garlic
- 1⁄4 teaspoon dried oregano
- 1⁄4 teaspoon pepper
- 1⁄4 teaspoon sugar

Salad
- 5 1⁄3 cups romaine lettuce (torn in peices)
- 2⁄3 medium zucchini (julienne)
- 2⁄3 red bell pepper (julienne)
- 2⁄3 yellow bell pepper (julienne)
- 6 2⁄3 cherry tomatoes (halved)
- 12 kalamata olives (Pitted)
directions
- Process all dressing ingredients until smooth in blender or food processor. Place remaining salad ingredients in a large bowl. Add dressing and toss to mix and coat. Servie immediately.
