Susan u r rite!!!! This was execellent!! Just got a Vitamix unit last week, used it to combine the dressing ingredients. Used only 2 tbsps of mayo thined with 3tbsps of pasta water. Also went back and made dressing again to marinate chicken breasts for me and the girls and salmon for my husband. Sent a "taste test" bowl to my mother she came over with her own bowl!! ( Kittencal I also make ur shortbreads, ur my best friend in my head)!
Oh my goodness! This was just the best recipe ever. I haven't been able to stop eating it. Someone dial 911!! The only things I did differently was to omit the olives, since I don't like them. Also I used a yellow pepper in place of the green, as green peppers don't like me. I used 1/2 cup of mayonnaise in the beginning with all the spices. I served mine with toasted and buttered ciabatta bread. Heaven! My husband thought it was a winner too. Try it, you'll like it!
Perfect. As well as I can remember, kitten. I have been "sneak" eating this for the last day now. I made it early yesterday, putting the dressing, along with the olive, the bell pepper, and onion and let it sit. Well, let it sit and accidentally reduced the noodle part by 1/3 (because of noodle stealing) Yikes. Was thinking I needed to make up for the loss of noodle, but in the end, (today) finished by adding the rest of the ingredients this morning. Oh this is one wow-factor pasta salad. This was absolutely wonderful! I made ahead and let it marinate in the dressing for at least 8 hrs. to give the pasta and veggies a chance to meld with the dressing. The flavors really blended well. The second day all I did was mix up a little extra dressing to throw on top at serving time, so it didn't soak in and make it too dry. I adore Greek food and this will be such a treat to have along with steaks, chicken, ribs, pork and burgers. Can't wait to have it again! Thanks for sharing with us Kittencal!
