This comes from a Rhodes Greece website I found with a lot of information by a lovely looking woman named Susie Atsaides. This recipe was posted for the Zaar World Tour 2006.
- 1 cup feta cheese, crumbled
- 1⁄4 cup giardinera bell pepper, finely chopped
- 1⁄2 tablespoon oregano
- water (or some juice from the giardinera)
- Just mix all of this together. Use the water sparingly, just enough to get the right consistency for spreading. Mind you, this is spicy.
My work colleagues call me the Queen of Dips, and this recipe reinforces my reputation. I made this as written, using a bit of juice from the giardinera -- can't imagine using just water.
