- 1⁄2 lb red lentil, washed and picked over
- 1 quart water
- 1⁄2 cup olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1⁄2 teaspoon fennel seed, crushed
- salt (optional)
directions
- Place lentils and water in a large pot.
- Bring to a boil and boil for 5 minutes.
- Remove from heat and set aside to soak for 1 hour.
- Return pot to heat.
- Add oil, onion, garlic and fennel.
- Simmer gently for 35 minutes, or until lentils are tender.
- Season with salt if desired.
