"I got this recipes from another website. It is very good and easy to prepare. I tried it once with canned chicken and bacon bits and didn't like the substitutions. I have used marinated artichoke heart and loved it."

  • Bring large pot of lightly salted water to a boil.
  • Add linguine and cook for 8 to 10 minutes or until al dente; drain.
  • Season chicken with salt.
  • Stir chicken with bacon in a large skillet or saucepan.
  • Add tomatoe and rosemary, simmer 20 minutes.
  • Stir in feta cheese, olives and artichoke hearts and cook until heated through.
  • Toss with fresh cooked pasta and serve warm.
  • Garnish with extra feta if desired.

  2. I started making this recipe thinking that I had all of the ingredients, but as it turned out, I was out of a lot of stuff! But it turned out delicious! I used half pkg of rotelle and left out the bacon, rosemary and artichokes. I subbed kalmata for black olives (had black olives, but I like kalmata better :-)). I used a quarter of a huge chicken breast, sauted with lemon garlic and lemon pepper seasonings. I'll definitely make again, hopefully with all of the ingredients! Thank you!
     
  3. To hot to cook right now. Terrific as a cold salad; I didn't cook anything but the pasta--just combined and added some chopped Basil. Yummy stuff!
     
  4. What a great easy supper! Two changes--used mozzarella in place of the feta and cooked mushrooms in place of the artichokes(family preferences). The rosemary just gave this dish such a flavor boost! And the smokey flavor from the bacon--WOW!! Will be having this again and soon!
     
  5. Excellent! This does have a mediterranean flavour to it and is so quick to put together. I first fried the bacon, then browned the diced chicken breast in a bit of the pan drippings from the bacon. The only change I made was to hold back the feta until serving the pasta, sprinkling it over at the end. I think this would be great with some added crunch, maybe some toasted pine nuts tossed in. Since DS had seconds and DH had thirds I'll definitely be making this recipe again. Thank you, Smilynn. Fantastic! :)

I love to cook with friends. Grilling out by the pool is one of our favorite pastimes. One of my passions is surfing for new recipes. I love to travel. If had a carefree free month off I would propably start my travels by driving up the east and west coasts visiting winerys and looking for great local restaurants. My pet peeves are people that talk with food in their mouths, or eat while talking on the phone and double dipping breadsticks or chips.
