Agree with all the previous reviewers - this is one awesome pizza. Kids didn't care for it, but DH and I couldn't stop eating it. I did the toppings the previous day and used a prepared crust so assembly was fast yesterday. I thought everything was perfect together. Thanks.

What can I say that hasn't already been said? This is an amazing pizza and I can't recommend it highly enough! Didn't take too long at all - I made all the toppings for this along with 2 other "gourmet" pizzas in under 2 hours. And the work was definately worth it! Thanks so much for posting your fab recipe!

Well my family rated this more than 5 stars! I made the pizza crust more wholemeal than white - a bit healthier. Also I substituted the eggplant for zucchini (courgettes) and pumpkin and roast baby tomatoes - otherwise followed recipe but cut way down on the oil and it worked wonderfully!

Can I give it more than 5 stars? It was definitely time consuming (3 hrs. total for me), but so well worth it!!!! Pour yourself a glass of Merlot have fun making it and most of all eating it! As a matter of fact....I've just decided I'm making it again tonight!

I had planned on only giving this 4 stars because after all the efoort that went into this did not seem to equal the taste when it was done. However, when I was snacking on the leftovers the next day I was surprised at how wonderful the flavours went together and I am giving this 5 stars. I don't know if I will make this again, as I am the only one who liked the toppings--my family prefers boring old pepperoni on their pizza *roll eyes*. This was a very creative entry and I wish you good luck in the contest!

Well done, Chef, well done! The presentation of your recipe is quite professional, I compliment you on your tidy mind. An above average pizza that transcends the image of pizza to which we have become accustomed. The combination of ingredients is a testament to your creative ability. The blending of herbs in right quantity is a talent you obviously enjoy. In tandem with the flavours of carmelized onion and eggplant combinations the result is an excellent tasting pizza which can be justifiably categorized as a "gourmet" pizza. I would recommend this pizza to my friends and certainly enjoy it with them. A truly saleable creation; thank you

If I could give it more stars I would. This is definitely worth the time to prepare. The flavors blended together well and seemed to melt in your mouth for a wonderful experience. Would not change a thing, definitely a keeper.

This dish was prepared for me by Lois M at our Ontario Zaar Luncheon. This was an awesome treat! It has alot of steps, but is well worth it. My hostess did say that the onions probably did not need quite so much Olive Oil, and they ended up pretty wet. But the taste...oh my, was it ever awesome! We also liked the easy to follow directions, and the fact that the recipe was seperated into sections. Thanks for a great recipe!

This is a wonderful, very flavourful pizza. The crust is simple to make, the taste and texture are excellent! I like the fact that the dough, onions,and eggplant mixture can be prepared ahead and assembled just before cooking and serving! I will definitely make this pizza again! A winner in my cookbook!

I loved, loved, loved this pizza! For the first time ever, I made my own pizza dough, and it was easy, and really good. I made the dough and preped the veggies the day before, and just assembled and baked when my guests arrived, this recipe is not that hard, just a little time consuming, Thanks for a great recipe!

This tasty vegetarian pizza was featured at a Zaar chef luncheon hosted by LoisM! The addition of some roasted, shredded chicken could easily satisfy the carnivors at your table. Although I didn't prepare this dish myself, I read the directions - they are excellent, detailed & very explicit! I found the caramelized onions rather sweet but thats just my personal taste. Thanx for posting!

This recipe is a great tutorial in how to get those truly mmmMediterranean flavours and will certainly please the vegetarians in your family. If you can't get it past the carnivores, just saute some ground lamb and add it to your list of fillings. I made it without this time and i think it's tasty just the way it is.

A pizza lover's delight! This recipe is great! The caramelized onions are a terrific flavor, and the eggplant adds a low, earthy essence. We loved the spiciness. Since I make home made pizza dough anyway, I thought this recipe went together quickly. When I make it again, I will add about a cup of smoked mozzarella because we love mozzarella, too.
