This came out of leftovers from my stuffed avocado salad recipe (111865). Love it!!!! Serve with tortilla chips or pita chips! Different from the same-o' salsa; great for Feta Cheese lovers!
- 2⁄3 cup crumbled feta cheese (about 4 ounces)
- 2 small ripe tomatoes, chopped
- 1⁄2 red onion, chopped
- 2 tablespoons chopped fresh parsley
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon oregano
- Mix all ingredients together in a bowl.
- Chill for 1 hour.
- Serve with tortilla or pita chips.
This is soooooo good! I can hardly wait for it to chill for the full hour it's that yummy. I added a couple cloves of garlic & also tossed in 1/2 a small cucumber diced up. I have some pita chips to serve it with. It's supposed to come to work with me tomorrow to share with my co-workers; I don't think it's going to make it.
Very nice tasting and I also used a mild feta but it was smooth. Hubby didnt want to wait Made for ZWT6 for the Xtra hot Dishes
It was good but next time I'll use a stronger Greek feta. I used a mild Israeli feta so maybe that's why it was a bit on the bland side.
