- Boil and rinse tortellini. Blanch spinach if using fresh. Defrost and drain spinach if using frozen.
- Combine tortellini, spinach, olives, tomatoes, onion.
- Mix oil and vinegar, then pour over salad mixture.
- Add cheeses.
