- 236.59 ml peeled and chopped cucumber
- 59.14 ml chopped green onion
- 22.18 ml chopped fresh parsley
- 22.18 ml chopped of fresh mint
- 29.58 ml balsamic vinegar
- 2.46 ml dried oregano
- 1.23 ml pepper
- 6 (42 inch) pita bread rounds
- 473.18 ml shredded iceberg lettuce
- 59.14 ml thinly sliced radish
- 29.58 ml thinly sliced radishes
- 59.14 ml sliced ripe olives
- 29.58 ml sliced ripe olives
- 118.29 ml crumbled feta cheese

HUMMUS
- 2 garlic cloves, minced
- 425.24 g can garbanzo beans, drained
- 44.37 ml lemon juice
- 29.58 ml plain nonfat yogurt
- 2.46 ml ground cumin
- 2.46 ml olive oil
- 1.23 ml ground coriander
- 1.23 ml ground red pepper
directions
- Add all ingredients for hummus in the blender until smooth.
- Combine the first 8 ingredients for the sandwich.
- Cover and chill for 2 hours.
- Spread 1/4 cup hummus on each pita round.
- Sprinkle lettuce, radishes and olives across centers of pitas.
- Top with tomato mixture; sprinkle with cheese.
- Roll up pitas; secure with wooden picks.
