Mom's Spanakopita

"This is my mom's recipe for Spanakopita. She makes it with more feta than spinach, just the way I like it. (I made the spanakopita in the picture with my friend Seth in my dorm's kitchen.)"

  1. Excellent! Even my "I don't like Spanakopita" hubby ate two helpings. A definite keeper and thanks for sharing.

  2. I have made these twice- absolutely fantastic! The perfect blend of cheese and spinach. Very easy to make.

  3. These were excellent!

  4. I was looking to recreate the many blissful plates of Spanakopita I've had at my favorite Greek restaurant, and this recipe really did the job. I loved that I could use frozen spinach - who wants to deal with fresh? - and that everything came together so quickly. I didn't use the egg, b/c my hubby can't eat them, but it didn't seem to cause a problem with the binding. I will definitely be making this again. Thanks for posting and thanks to your mom for creating it. It was just wonderful.
