      Cook potatoes until soft, then cut into cubes. Cube hard boiled eggs.

      Mix all together and chill!

      Potato Salad that won't spoil in the sun (well not that fast!).

      Nice alternative to traditional potato salads. The tzatzki gives it a nice touch. I recommend lots of black pepper!

      Simple potato salad that used readily available ingredients. Good lower fat option. I used Greek yoghurt to good effect.
