Quick Cucumber, Tomato and Feta Salad

- 1 cucumber, quartered lengthwise and sliced
- 236.59 ml cherry tomatoes, halved
- 118.29 ml feta cheese, cubed
- 118.29 ml kalamata olive, pitted
- vinegar or lemon juice
- extra virgin olive oil
- sea salt & freshly ground black pepper, to taste
- 1 head iceberg lettuce
directions
- In a small bowl, toss cucumber with cherry tomatoes. Add feta cheese and a handful of pitted kalamata olives.
- Drizzle with a little vinegar or lemon juice and olive oil and season with salt and pepper.
- Spoon each serving into an iceberg lettuce leaf.

A very healthy, fresh and satisfying salad! I luved the juicy cucumber with the sweet and sour tomatoes and the salty feta cheese! YUM! The black pepper was the perfect seasoning. I think some dill would also be a nice addition. Instead of the olives I used some spring onion and a chili pepper, cause I really dont enjoy olives in my salad.
