Santorini Feta & Spinach Pizza

ingredients
- 1 pizza crust (homemade preferably or store bought)
- 1⁄3 cup tomato sauce (homemade is best)
- 4 ounces goat cheese
- 8 ounces feta cheese
- 1⁄3 cup mayonnaise (not low fat)
- 3 garlic cloves
- 1⁄4 cup kalamata olive (chopped)
- 1⁄2 chili pepper (minced)
- 1 teaspoon dried oregano
- 1 small red onion (sliced into thin rings)
- 1 cup baby spinach leaves
- 1 cup mozzarella cheese (shredded)
directions
- Prebake pizza crust in a 400F oven for 5 minutes.
- Spread tomato sauce over crust.
- Mix together the goat cheese, feta, mayo, garlic, olives, chili pepper & oregano.
- Spread this mixture over the tomato sauce.
- Scatter on the red onions, followed by the spinach.
- Sprinkle on the mozzarella.
- Enjoy with a glass of Vino and pretend you are overlooking the blue waters of Greece.
