Shrimp and Feta

  • Cook orzo according to package directions. When almost done stir in the thawed peas.
  • Drain.
  • Heat 2 tbsp olive oil in nonstick pan , add onion slices and chopped garlic., cook for 3 minutes over medium heat stirring occasionally.
  • Stir in Marinara sauce and oregano and black pepper.
  • Simmer for 3 minutes add shrimp and cook for 6 minutes stirring occasionally.
  • Stir in lemon juice .
  • Spoon the shrimp mixture over the orzo. Crumble feta cheese over top and garnish with lemon slices.

  1. This had a good flavor and was a snap to make. A couple things I would be sure to do next time I make this though. First I would double the orzo. One cup was not nearly enough for us and I ended up cooking another cup while we were eating. Second, I would use a high quality, fresh tasting marinara sauce. I just used an inexpensive sauce and while it was OK, a nice, chunky sauce would have REALLY improved the dish for us. Thanks for sharing!
     
  2. Easy as a button putting this very joyful and very delish dish together. It took like 15 minutes, flat. Loved it! I didn't change anything, except spoon the marinara sauce over the orzo, and place the shrimp delicately on top of the goodness. Garnished with lemon and chives. You can't get much better then this greater - then - 5 - star - dish. No need to go out, you have it on your plate in less time then waiting for the doorbell to ring-a-ding. <p>I have 5 kids, 12 grandkids and now have 6 great grandchildren. I don't get to see them as much as I would like. I love to garden and I am also a broadcaster on radio and the net.. Recently married to an American although remarriage is something I thought I would never do again. He traveled 3000 miles with his cat to come to marry me. <br /><br />I owned my own craft store for 10 years but gave that up after a huge craft discount depot opened just 4 blocks from me. I used to teach 6 days a week; crafts like quilting, dried wreaths, Christmas ornaments, etc.</p> <p>I &nbsp;had open heart surgery and recovered nicely.I am not the best patient in the world as I want to get going and get back to work and my life as I knew it.</p> <p>I have retired and do help out at a soup kitchen for the homeless and 1 morning a week I make French Toast at a community center that supplies 26 schools with free snacks and sandwiches&nbsp; for the kids <br />I have been knitting blankets for Blankets for Canada an organization that helps the&nbsp;homeless keep &nbsp;a little bit warmer. I also knit for many different charities that supply kids with warm clothes.
