Skordalia (Garlic Sauce)

"This Greek sauce has a potato as the unusual base. I haven't tried this yet, I found the recipe in an old cookbook I've had for years, & thought it would be a perfect submission for the ZWT4 - let's hope it's a good one!"

  • Peel potato and boil until tender. Put through a ricer or sieve. Measure 1/2 cup of potato & put in a bowl; mix in garlic and salt. Gradually add olive oil and vinegar alternately while beating with a spoon. Chill. Serve with meat or fish.

  2. Very interesting sauce - so velvety, almost buttery. I added as much vinegar as I thought tasted right, probably a few tbsp less than what's called for, and it's still very tangy. I also lightened up on the oil a bit, the consistency was good so I figured why add more. Planning to serve alongside a grilled meal. Thanks for posting, it's really unusual and enjoyable! ZWT6

  4. Love how easy this was to make. The texture not quite what I expected but had a good garlic flavor. Going to give this one another try using less oil.
     
  5. Loved this! Sometimes I find similar sauces a little rich but the potato base blended beautifully and added a little bit of substance while still retaining a nice, light and creamy texture. It went great with roast chicken and a salad.
