Spaghetti With Tomato and Feta Sauce

ingredients
- 2 tablespoons olive oil
- 1 teaspoon dried oregano (Mediterranean is best)
- 1⁄2 lb mushroom, sliced
- 1⁄2 cup green onion, sliced
- 1 garlic clove, minced
- 1 (1 lb) can tomato sauce
- 1 (1 lb) can tomatoes, diced
- 1 teaspoon sugar
- 1⁄2 cup kalamata olive, pitted and sliced
- 1⁄2 cup fresh parsley, minced
- 1 tablespoon red wine vinegar
- 3⁄4 lb spaghetti, cooked al dente
- 1 cup feta cheese, crumbled
- fresh ground pepper
directions
- Heat oil in a large non-stick skillet over medium-high heat.
- Add oregano, mushrooms, green onions and garlic; saute 3 minutes.
- Add tomatoes, tomato sauce, sugar, olives and pepper to taste.
- Simmer 15 minutes.
- Add parsley and red wine vinegar.
- Cook 5 minutes or until thoroughly heated.
- Place sauce on pasta.
- Top with cheese and serve.

This was so delicious! I just happened to have the right amount of leftovers on hand to make a serving for one, and it was such a treat. It is quick to throw together and has such wonderful bright flavors. I added some cooked lentils to increase the protein and it was a great fit. I imagine, too, that you could sub your favorite veggies in for the mushrooms; for me I would like to try zucchini next time. Thanks for posting! Made for ZWT 9, Gourmet Goddesses.

There's nothing about this recipe not to like. It's easy, and we enjoyed the salty flavors of the feta and kalamatas. The dish is pretty saucy (no complaints), and as another reviewer mentioned, lends itself well to the addition of extra veggies. I used Newman's Marinara sauce for the tomato sauce. Oh Evelyn, this is so good! Just the perfect meal for a Friday night when I'm tired and don't feel like exerting myself too much. I only made half the quantity of pasta since it was just me and my husband, but made the full quantity of sauce to have some for another meal during the week. I'm sure the leftovers will taste even better!

OK, here goes. I live in Athens, Greece. I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages!
I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure.
So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call.
What did I do wrong?
Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths.
I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time.
