      Very unusual and a great way to use up the spearmint we've got growing in our garden! I must admit that I like the carrot orange and peanut salad I posted some time back better as a use for shredded carrots, but this is some good!

      I only had about a cupful of baby carrots, so made a mini-version, and...oh WOW!!! I wish I could tell you how good this is after it sits and let the flavors "swap around," as Huck Finn said, but I can't, because I have eaten it all up, right out of the food processor! Now, without changing any of these ingredients, what I did was make a creamy pate'-like spread out of it all, simply by pulsing that blade many times. Let me assure you all, it makes a FAB spread for toasted pita wedges! Thanks, MarraMamba!

      Wow! Spectacular!!!! The only thing I changed was more garlic and I used way less oil then called for. I don't like my salads greasy. Other then that, I used my food processor to shred the carrots and did you know you can use your garlic press to grind the walnuts? I can't stop eating this. I hope there's some left for my family for dinner! :) I will be making this all year long!

      What can I say that hasn't been said? By using the food processor to do the grating (I grated the walnuts along with the carrot) it takes about 5 mins. I don't have fresh mint but as tasty as this was with the dried I know that it would be even better with fresh. What a great summer side salad.

      I love this salad. The flavors go together so well. I misread the part where it says 'ground' walnuts and just chopped mine. But it was perfect. Gave it an extra crunch. I used less oil and more garlic. Thanks for a great recipe.

      This little salad has a bold flavor. I loved the cinnamon in it. I cut back on the olive oil a bit because I'm trying to cut calories where I can. A great healthy salad made for ZWT4 by a jefe de la Cocina.

      An easy and terrific salad that really is enhanced by the addition of the walnuts - which I also garnished the salad with! I added the Cayenne pepper for the extra kick and we both loved it. I made about a third of this reicpe as there were only the two of us - a wonderful BRIGHT salad for a dull day! Thanks Marra! FT:-)

      Yum! This salad was so quick to prepare and very yummy. I made two versions, first version was exactly as written but garnish the salad with walnuts for Hubby and I. The second version was without walnuts and cayenne pepper for Little Miss (DD). Everyone enjoyed the flavours. Thank you MarraMamba
