- 1 lb fresh sardine, washed, cleaned and butterflied
- 2 garlic cloves, peeled and finely chopped
- 1 green bell pepper, seeded and cut into strips
- 1 tablespoon finely chopped fresh marjoram
- 1 tablespoon finely chopped fresh flat-leaf parsley
- salt
- fresh ground black pepper
- 2 tablespoons olive oil
directions
- Preheat the oven to 350°F
- Place a layer of the sardines in a shallow baking dish.
- Sprinkle the garlic, pepper strips, marjoram, parsley and seasonings on sardines.
- Repeat layers, ending with sardines.
- Drizzle with olive oil and bake for 20 minutes.
- Serve hot or cold.
