Stephen’s Greek Salad

SALAD
- 6 roma tomatoes, halved lengthwise and cut in thirds widthwise
- 3 -4 chopped celery ribs
- 1⁄2 cup chopped red onion
- 1⁄2 cup pitted black olives, halved
- 1 red pepper, cored and chopped
- 1 green pepper, cored and chopped
- 1⁄2 English cucumber, peeled, seeded and chopped
- 200 g canadian feta cheese, crumbled

DRESSING
- 1⁄4 cup extra virgin olive oil
- 1⁄8 cup white vinegar
- 1⁄2 lemon, juice of
- 1 dash Tabasco sauce
- ground pepper
- salt
- 1⁄2 teaspoon italian seasoning
- 2 minced garlic cloves
directions
- Shake dressing and pour over salad.
- Stir salad to coat with dressing.
- Cover and refrigerate for 3-4 hours, stirring occasionally.
- If you increase the quantity of salad increase the oil and vinegar a bit in a 2 to 1 ratio.
- Enjoy!

If I could give this salad more then 5 stars, I definitely would! If you ever meet Stephen tell him thanks for sharing his recipe with you for me! I cooked up some chicken for a dish we were having for dinner and had a small split breast left over, so I added it to my salad. I'm having the salad for lunch again today but without chicken. Oh, and I love the fact the DH and kids do not like kalamata olives or feta cheese, so I can have Stephen's Greek Salads all to my self :D This is one time I rated something solo! (families opinion did not count)

MMMMMMMM!!!! Very delicious, flavorful salad. We loved this! I followed the recipe exact except I used pitted kalamata olives (personal preference). I halved the recipe since it was just dh & I but I was wishing I had made more!!! This one is a keeper! Thanks Leslie, and thanks to Stephen whoever you are!
