Tzatziki

My sister-in-law's recipe!

Ingredients:

Serves: 12

Yield: 4.0 cups

• 3 -5 garlic cloves , peeled
• 2 cucumbers , peeled and seeded
• 2 cups yogurt
• 2 tablespoons olive oil
• 1 tablespoon white vinegar
• salt
• pepper

Directions:

1. Add garlic to food processor and mince.
2. Cut cucumber into chunks, add to food processor and mince.
3. Put this mixture into a strainer, and let the juice drain out for 1 minutes or so. (I drink it -- a little strong, but very refreshing, and very healthy.).
4. (If you have regular yogurt, you need to drain it, using a clean towel in a strainer. I get the 'Greek style' yogurt from Trader Joe's, which is already drained.).
5. Put the mixture back into the food processor and add yogurt, oil, vinegar, salt and pepper to taste.
