Greek Tzatziki

"An excellent accompaniment to souvlaki or gyros. Tastes best if allowed to sit refrigerated for several hours. You can find Greek style yogurt for this recipe in Greek or Middle Eastern delicatessins, or just feel free to use plain yogurt."

  • Grate cucumbers and allow to drain in a sieve, weighted by a heavy plate, for 15 minutes.
  • Wrap grated cucumbers in cheesecloth to squeeze all remaining liquid out.
  • Set grated cucumbers in a mixing bowl.
  • Place garlic cloves in a mortar and sprinkle with a little salt.
  • Grind into a paste and add mixture to cucumbers.
  • Whisk together yogurt, vinegar, pepper, mint, and oil.
  • Add yogurt mixture to cucumbers and garlic and mix all together thoroughly.
  • Refrigerate until needed.

  1. Very good, but too much garlic for us. Made half the recipe to accompany greek burgers that already had garlic in them. Next time will take down with only 1 or 2 cloves only
     
  2. This was delicious. I did reduce the garlic. We love garlic but I figured our garlic was too potent to add this much and not all our guests would appreciate it. I will be making this again

  4. Excellent! I made it with Dill and will try with mint next time. Used half Fage 2% greek yogurt (amazing stuff) and half sour cream. I could eat it by the spoonful, thanks!
     
  5. This is a great recipe, and one perfect for gyros. It's easy, and everything can be done 'to taste.' To get all the water out of the cucumbers I grate them on a cheese grater and then squeeze them mercilessly in an old potato ricer. :) This also works well for getting the liquid out of thawed spinach etc., in other recipes where the water is a problem.

Tweaks

  1. This was really goodl To lazy to make a garlic paste so I put a little garlic powder instead. I also only made 1/2 this recipe. Had it with #39526 Pork Souvlaki.
     
  2. Delicious and easy! I didn't have time to drain the yogurt, but it still tasted great. I used dill weed instead of mint and left out the olive oil. It was very simple and a great topping for Recipe #81725.
