This is probably one of my top 5 dishes of all time!! We left out the tomatoes, but otherwise made exactly as stated. I was nervous about the mint being really strong, but it was not at all. This is the best Greek salad I have ever made. I did not use the oil and vinegar dressing, but used Farmer Boy's Greek Salad dressing. I used all the spices, garlic and omitted the red pepper flakes. All else was in the salad. I loved the idea of the chopped fresh spinach and as I am trying to be a Weight Watcher it was about 7 points for 2 cups full. Thanks so much. Excellent recipe, my BF and I both enjoyed this with a few low-fat adjustments. Would have been even better had I added all the feta cheese the recipe called for. Oh well, I thought I had plenty left in the fridge. Instead of cutting up the baby spinach I steamed for about 1 minute, added extra vinegar, 1/2 tablespoon oil and 1/2 cup kalamata olives.
