Yummy Greek Spinach Pie (Spanakopita)

"This is my take on my mother's and grandmother's Spanakopita. Since they never measured anything (and I have also adopted this wacky cooking style) these are my best approximation on measurements. Enjoy!"

  • Saute onion, green onions and garlic, salt and pepper to taste, until soft in 3 or 4 tablespoons of olive oil.
  • Stir in spinach and parsley,until spinach is limp.
  • Remove from heat and set aside to cool.
  • in a bowl mix together eggs, ricotta, and feta.
  • Stir in spinach mixture.
  • Lay 1 sheet of phyllo dough in a 9x9 in baking dish and brush lightly with melted butter.
  • Lay another sheet of phyllo dough on top, brush with butter, and repeat with four more sheets of phyllo.
  • Spread spinach and cheese mixture into pan and place another 6 sheets of phyllo in the same process as before.
  • Place in a preheated 350 degree oven for 30 to 40 minutes.
  • Serve while hot.

  3. This recipe is fantastic. Made it tonight. Added 1/4 tsp allspice and 2 Tbls fresh dill. DELISCIOUS!!!
     
  4. I didn't have parsley, but had fresh dill which I used in its place (many other recipes called for dill and I love it so I took a shot at it). Likewise, I didn't have ricotta, but had cottage cheese. After browsing other recipes and this, I improvised to make it as close to this recipe as possible (based on all the raving reviews). I was really impressed, I've heard so many horror stories with the use of phyllo dough, but this was very simple to put together and baked up nicely. <br/>I'm looking forward to making this again (with all of the directed ingredients). Thanks for sharing!

Tweaks

  1. The recipe was very good but I made the following modifications to bake a 9 x 13 pie: more melted butter 1 1/2 c ricotta cheese Other modifications: Make sure to squeeze all of the excess liquid out of the spinach & I prefer using Myzitha cheese instead of feta....it's less salty.
